Comparing Two Different Keto Waffle Recipes






Oh my! My first blog post ever! I can’t believe I am finally making this happen. For anyone who is visiting my blog for the first time which is everyone, thank you!

MY NEW WAY OF EATING
Just recently in January I started a new lifestyle. I decided to jump into eating the “keto” way. I had been reading a lot about it and did a lot of research. I jumped in full force almost exactly 3 months ago. After a couple of months of getting the hang of eating the “keto way” I decided it was time to incorporate some of my favorite foods but ketofied! Fast forward to the present day where I was craving pancakes, so I went to where I go for all my recipes (and that is Pinterest) to look for a keto pancake recipe. I love me some fluffy pancakes but the recipe we typically use has white flour which of course I can’t have on keto. When I tried the keto pancakes recipe I found out that these keto pancakes were not fluffy at all so instead I made them into waffles. Don’t be afraid to experiment and change up recipes you come across. I do it all the time! That is why I decided to name my blog “hope it tastes good!” I am constantly saying that when I am trying something new.
KETO ALMOND FLOUR PANCAKES/WAFFLES
Now that I knew that I could use the pancake recipe for waffles I was excited! Since currently my husband is the one cooking during the week because of the quarantine, I get excited about weekends because I know that I will be cooking or baking or both. I normally eat salty foods like bacon and eggs for breakfast but on the weekends I treat myself. My son wanted blueberry waffles the next weekend so I looked up the keto almond flour pancake recipe from the prior weekend. I had some blueberries from the last grocery trip. So I told my son “just throw the blueberries on top” so he did. We were laughing because at first the waffles looked like they were stained with wine! But as we kept making them and stacking them they looked so pretty. Please be aware that they do take about 3 to 4 minutes each waffle since we were using the mini waffle maker. If you have a regular size waffle maker that will work too.  

BLUEBERRY KETO CHAFFLES
So a week later I decided to try a different recipe, so again I went into Pinterest and searched “blueberry keto chaffle.” Chaffles are a new trend going on in the keto world. “Chaffle” stands for cheese waffle. They are waffles that are made with shredded cheese and egg using the mini waffle maker. You can make these sweet or unsweet. I will write a more detailed blog post on the chaffle another day but for now we are going to talk about a sweet chaffle which is what I made for this recipe. For the blueberry chaffle recipe it called for the blueberries to be mixed in the batter. I have to say that to me these blueberry chaffles were a lot prettier since the blueberries were inside. Now you might be wondering were they good? Yes! They were so good and my kids were a fan of them too!

Now what was my conclusion with these two recipes you ask? Now remember that this is just my opinion and based on my preference. You are welcome to please try these two recipes on your own and let me know what you think.
THE RESULTS
For the first recipe which is originally for keto pancakes that I turned into mini waffles I thought they were delicious but lacked a little bit of density. They held up really good. The taste of the blueberry wasn’t too apparent in the keto almond flour waffles which I was a little disappointed by, but remember I decided to just throw in some blueberries (the recipe doesn’t call for them). But if you put some blueberries on top of the waffles and drizzle some sugar free syrup, they are outstanding! Please know that when you first take the waffles out of the waffle maker they will be soft, but as you let them cool they will get sturdier. This goes for both recipes.
Now, on to the blueberry keto chaffle recipe. I love a good chaffle because for some reason they seem to be a lot more fluffy and more dense compared to the keto pancake recipe and remember I am looking for fluffiness. I think it’s the fact that you use shredded cheese and you don’t blend the mixture. This blueberry keto chaffle recipe has a more blueberry taste to it. You probably only need about 2 of them since they are much more dense. The only thing is that you could taste the cheese a little bit. I used mozzarella cheese or you could use monterey cheese. My husband liked them because he said they had like a sweet and salty taste to them. I know a lot of people are into sweet and salty so if you are, you would enjoy these. Now again, once you top them with blueberries and syrup you can’t taste the cheese as much anymore.
Both recipes are super simple! You don’t need too many ingredients. So I would recommend both of them. I would say choose by the ingredients you have on hand. But if I had to choose one I would say the Blueberry Keto Chaffle Recipe!
NUTRITIONAL FACTS
For those of you that are counting net carbs like myself, the first recipe which was the keto almond flour waffles, it has 3 net carbs per 2 mini waffles. For the second recipe which is the blueberry keto chaffles, they have 4 nets carbs per 2 mini waffles.
