Delicious Keto Refried Beans -You'll never guess what they're made of!
You guys will never guess what these “keto refried beans” are
made of! For those of you that are not familiar with a keto diet you might not
know that you are not allowed to have any type of beans in your diet. Yes beans
are great fiber but for keto they are very high in carb count and would kick
you out of ketosis. Since hubby and I
are now jointly living a healthier lifestyle we only cook keto friendly meals
but occasionally he does enjoy a side of pinto beans. Me, not so much, I stay strict
keto for all my meals. My daughter is mostly vegetarian so she constantly asks
for homemade bean burritos. My favorite food is not Mexican food surprisingly
but I do love me some refried beans! I’m learning in this new keto way of eating
that almost anything can be ketofied. So, one day I saw a girl on you tube
making keto beans and was immediately intrigued. She was making them out of
eggplant! So what did I do? I went straight to the grocery store and picked me
up some eggplants.
Now how do you make them you ask? Its very simple. Refried beans are typically pinto beans fried in vegetable oil and then mashed down until you get the consistency you want. In Mexico I’m sure they fry them in lard. Well these are made with cut up eggplant put to cook with oil of your choice. I use avocado oil since that is Keto friendly. So, with all the keto refried bean recipes I found the point was to get the eggplant to pick up the flavor of whatever it is you are cooking it with. Since I follow a lot of keto girls I saw a few recipes and started experimenting until I felt I got the best taste. I tried one with soyrizo which would be vegetarian/vegan because I was hoping my daughter would like them and eat them too. Well, she didn’t. she doesn’t like anything! I thought they were delicious! But, unfortunately soy is not allowed on keto so I proceeded to make the chorizo keto refried beans. This one was my favorite! Then I tried one without any rizo, just tomato and seasoning. This one was surprisingly not as good as I expected. The flavor was more like salsa. The eggplant picked up the tomato flavor a lot. Even though I added raw onion, cumin, salt and pepper it was still not the flavor I was looking for in my beans. But, don’t think I didn’t eat them! I totally enjoyed them with my new addiction: Quest chips! Quest chips have been a lifesaver when it comes to craving junk food! They are very low in net carbs and perfect for eating Keto. The chili lime one are my favorite. I also enjoyed the keto refried beans with guisado (stewed meat) and milanesa (country fried steak). Which will be my next post! Now the opportunities are endless when it comes to enjoying my meals with a side of “refried beans.”
So to conclude my keto bean experiment, I thought the chorizo
beans were the tastiest. They had the best flavor because obviously the chorizo
has a lot of seasoning. My next favorite would be the soyrizo refried beans and
for those of you that don’t eat meat or are vegan this would be the best
option. The recipe without rizo I would suggest experimenting a little more
because to me it wasn’t as flavorful as the other two recipes. Maybe I need to
put more cumin or more onion. Side note: I do suggest putting the onion raw
into the blender and not cooking it with the eggplant. When I experimented and
cooked the onion with the eggplant it made it really sweet. Also, your beans
taste so much better the next day! Not sure why, they just do.
Chorizo Keto Refried Beans
Blender
1-2 tbsp of oil of choice
1 eggplant
1 cup of chorizo or soyrizo
1 garlic clove
A few pieces of white onion
Salt and pepper to taste
Pour oil into a pan and heat up medium high. Once heated pour
½ a cup of chorizo or half a tube of chorizo into the pan with the minced
garlic. While the chorizo is cooking,
peel and cut up the eggplant into small squares. After cooking up the chorizo a
bit mix in the cut up eggplant and cook it up until the eggplant is soft and
translucent. After you get the eggplant soft and translucent transfer the
eggplant and chorizo into a blender, this is when you can add some salt and
pepper to your taste. Then put a few pieces of raw white onion in the mix and
pour a little bit of either water or chicken broth. Not too much just enough to
get the eggplant chorizo mix to blend. After you see that the eggplant is
completely blended you are done! Now these keto refried beans do have a very
smooth consistency like beans from a can. My husband and I didn’t mind it but
if you want to have more texture to your beans you could always save some of
the cooked up chorizo and after you blend the eggplant pour it back into the
pan and mix the left over chorizo bits into the beans so that you have chunks
of chorizo and more texture. You can also just sprinkle it with chorizo like I
did in my picture.

Keto Chorizo Refried Beans with Quest Chips |
Keto Refried Beans (without chorizo or soyrizo)
Blender
1-2 tbsp of oil of choice
1 eggplant
chile serrano (spicy, optional)
½ cup of tomato
A few pieces of white onion
1 garlic clove
Pinch of cumin
Salt and pepper to taste
Pour oil into pan and heat up on medium high. Once heated pour your tomato, chile, garlic and cumin into the pan, sauté it for a little bit and then pour in your cut up eggplant. Make sure to peel and cut up your eggplant into small squares. Once you have mixed it up and let it cook up until your eggplant is soft and translucent put it all in a blender. Season with salt and pepper (you want a little more salt in this recipe since you have no chorizo seasoning) put a few pieces of raw white onion. The reason why I emphasize raw is because if you decide to cook the onion with everything else your beans will taste a little sweet. Once you have everything in the blender pour a little bit of water and blend up, You might give it a little taste test in case you need more salt. Then you are ready to enjoy your keto refried beans!
